Fresh natural Sydney rock oysters with Tetsuya dressing on the side

Ingredients

  • 24 Sydney rock oysters
  • Tetsuya dressing

Method

Step 1

Clean oysters of any excess shell.

Step 2

Pour about 30ml of Tetsuya dressing into each of 4 small dipping bowls

Step 3

Serve 6 oysters on each of 4 plates with matching dipping bowls and small spoons (tip: spoons are easier than forks to handle oysters!)
